Ginger's Chicken Minestrone

Clean recipe for soup filled with healthy and delicious goodness. Spinach included.

Ingredients

  • 4 Chicken breasts, cooked and chopped (organic preferred)
  • 1 medium Onion, chopped
  • 1 Bell pepper, chopped - color of your choice (I used red)
  • 2 Tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 32 ounces Chicken broth
  • 1 can Beans, rinsed and drained, any color (I used black beans)
  • 1 can Diced tomatoes, drained
  • 4 handfuls Raw spinach
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried Italian herbs
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish

Instructions

  1. Cook onion, pepper, and garlic in oil.

  2. Add chicken broth and other ingredients except cheese.

  3. Simmer about ten minutes.

  4. Top individual servings with Parmesan cheese.
